Ingredients

  • 3 tbsp unsalted butter
  • 280g (10 oz) mini marshmallows
  • 180g (6 cups) Rice Krispies cereal
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 100g white chocolate chips or melting wafers
  • 60g dark chocolate chips or melting wafers
  • 1 tsp coconut oil or vegetable oil (for thinning chocolate, if needed)

Instructions

  1. Line a large baking sheet with parchment paper and lightly grease your hands with butter or cooking spray.
  2. In a large saucepan over low heat, melt the butter. Add the marshmallows and stir continuously until fully melted and smooth. Remove from heat and stir in the vanilla extract and salt.
  3. Add the Rice Krispies cereal to the marshmallow mixture and fold quickly until every piece is evenly coated.
  4. Allow the mixture to cool for 2–3 minutes until it is cool enough to handle but still pliable. Using greased hands, scoop about 1/4 cup of mixture and press firmly into a round ball shape (roughly the size of a tennis ball). Place on the prepared baking sheet. Repeat with the remaining mixture to form 12 balls.
  5. Let the balls sit at room temperature for 10 minutes to firm up completely.
  6. Melt the white chocolate in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth. Stir in a few drops of coconut oil if needed to thin. Spoon or drizzle white chocolate over each ball to cover most of the surface, leaving small gaps for the dark chocolate patches. Let set for 5 minutes.
  7. Melt the dark chocolate in the same way. Using a small spoon or a piping bag, add dark chocolate pentagon-shaped patches in the gaps to mimic a classic soccer ball pattern.
  8. Allow the chocolate to set fully at room temperature (about 15 minutes) or place the tray in the refrigerator for 5 minutes to speed it up.
  9. Serve at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days.
